It’s time to remind you about The Heart of the Matter and that this month’s theme is pasta. Entries keep trickling in but now it’s time for a bit of flood my friends so get on making your pasta, post about it and then you send me the link to your post. Here’s the announcement for this month where you find the whole thing outlined a bit more in detail. It’s quite easy to make heart healthy pasta, skip cream and animal fat, keep it on the leaner side and it’s done. I tend to make pasta with vegetables a lot and that’s quite healthy and simple. To prove how simple it is today’s pasta is one that some of you probably have already tossed together when you were in hurry but wanted a comforting and healthy meal, if you never tried it you have to try it unless you dislike spinach, walnuts or balsamic vinegar.

PASTA WITH SPINACH, WALNUTS AND BALSAMIC VINEGAR or PASTA CON SPINACI, NOCI E ACETO BALSAMICO

Spinach, if you have fresh that’s better but if not, use frozen (it’s better to eat frozen vegetables than no vegetables at all)
Walnuts
Balsamic vinegar
Salt
Extra virgin olive oil

– Cook the pasta.
– Sauté the spinach in some olive oil until cooked, it doesn’t take long. If you want you can add a little water and don’t forget to salt it.
– Chop the walnuts and add them to the spinach a couple of minutes before it’s ready.
– Add the balsamic vinegar and sauté for a minute before you add it to the pasta.
