What don’t I do for food blogging and above all The Heart of the Matter event? To what length don’t I go in order to create a heart healthy pasta dish? I have bought something I never liked that much and I don’t think I ever will like: whole wheat pasta. I like whole wheat in almost any form but I just can’t make myself like whole wheat pasta despite all the effort I have put into it. I like my pasta to be as it should be, yellow-white pasta di grano duro, preferably artigianale as it is called in Italian. But today I present a pasta dish made with whole wheat pasta, just remember that it probably is even better with normal pasta… I’m pretty sure that frigitelli peppers are the same as Anaheim peppers (thanks Alanna!) and if they aren’t exactly the same, at least they are very similar. And do try to get sweet and tasty tomatoes because they are not cooked in this recipe, health wise tomatoes yield most when they are cooked but it gives a nice fresh taste here!

PASTA WITH ANAHEIM PEPPERS, FRESH TOMATOES, BASIL AND PINE NUTS or PASTA CON FRIGITELLI, POMODORI FRESCHI, BASILICO E PINOLI

Pasta, whole wheat or normal
Anaheim or frigitelli peppers
Garlic
Sweet and mature tomatoes
Fresh basil
Pine nuts
Salt
Olive oil

– Start up with the pasta.
– Dice the tomatoes and incline the cutting board slightly so that any eventual excess liquid can drip off.
– Either chop finely or pestle the basil leaves and the pine nuts into a mash (?).
– Cut the peppers into thin slices and sauté in olive oil together with the garlic and some salt, when they are soft and begin to brown you add the basil and pesto mix. Stir.
– Add the fresh tomatoes, mix\well and toss it all together with the cooked pasta.
– Serve!
