This year something strange is happening to me because I enjoy gardening again. Not that I go crazy for it but I don’t mind it-quite the contrary, I even want to plant new flowers and bushes and I haven’t felt like that for years. So as a treat for the substantial gardening session I had yesterday, I’m soon off to one of the many plants schools that Pistoia and surroundings have to offer and I’m going to buy myself a lot of beauty! And then I’m going to dig wherever I find a space. This is spring, this year it’s making me feel so much better and I see it as a symbolic sign of the state of my mind. Sometime ago I wrote about the garden often being used as a metaphor of man’s/woman’s state of mind or soul and if this is true also in real life, mine is in a better state than it has been for years – I love poetry, I don’t even have to read it to make me happy!
Spring also brings other joys, the other day I bought three big bunches of fresh Tropea onions, so sweet that you can eat them like apples almost. I have been making some dishes with them raw, not so good for my breath but incredibly good for my taste buds!

PASTA WITH FENNEL TINGED TOMATO SAUCE AND TROPEA ONIONS or PASTA CON SALSA DI POMODORI, SEMI DI FINOCCHIO E CIPOLLE DI TROPEA

Pasta
Simple tomato sauce
Fennel seeds in powder (I run in a mixer until powdered)
Fresh Tropea onions or some other type of very mild fresh onions
Salt
Olive oil

– While you make the pasta, chop the white part of the onion and put it aside. Then cut strips of the green past of the onion and put it in a pan together with olive oil and some good pinches of fennel seed powder.
– Braise it for a couple of minutes before adding the tomato sauce. Cook for five minutes and then add about half of the onion to it.
– Mix the tomato sauce with the pasta and then sprinkle the rest of the chopped onion on top before serving or let each and every one do it for themselves!
