PARMESAN CHICKEN ON SAFFRON QUINOA WITH SUN-DRIED TOMATOES

Has this blog turned into a sort of diary for me? I think it has, at least certain aspects of it; the need to communicate with someone/thing outside myself, the retelling of events-past and present and the unceasing stream of dishes that I post and that I obviously eat are confirmations of my life and then I’m just speaking about the written part of this blog, the photos are clearly a visual diary of what I see and how I see it. What an ego trip blogging is. As a Swede and therefore Lutheran I feel slightly uncomfortable about this but I do work on it a lot. Still. I remember how I as a seven year old told my parents not to brag when they said they had done something good. Isn’t that horrible? So small and already stifled and I can’t even blame my parents for it as they obviously did allow themselves to enjoy success or what ever it could be. I have always had that little forbidding being sitting on my shoulder, whispering in my ear and maybe that is why I ended up with Italians without consciously wanting it because here you are allowed to acknowledge that you are good (I hesitated there because I wanted to write ‘can be good’ instead of ‘are’, you can see that I’m still conditioned by my demon) at something both by yourself and by others and it’s so liberating. Another reason why I like Italy so much.

I got the idea to use saffron with quinoa from a Swedish food blogger friend and I haven’t been able to forget it because I though it was such a great idea.

PARMESAN CHICKEN ON SAFFRON QUINOA WITH SUN-DRIED TOMATOES

Chicken breast
Freshly grated parmesan
Breadcrumbs

Quinoa, 80 g/ 2.82 oz uncooked quinoa per portion
Saffron, 0.5 g/ 0.018 oz for two portions
Sun-dried tomatoes, 1 per portion
Salt
Olive oil

– Rinse and cook the quinoa in salted water and at half time, you add the chopped sun-dried tomatoes and let them cook along.
РMeanwhile you cut the chicken i rather small pieces and turn them in grated parmesan and breadcrumbs (3/4 parmesan-1/4 breadcrumbs) and then saut̩ them gently in olive oil in a pan or a skillet.
– Take out the chicken and then put the drained quinoa into the pan, add the saffron and stir and fry for about a minute.
– Put the chicken on top of the quinoa and serve it!
