OVENBAKED ARTICHOKES WITH SALSICCIA AND LEMON or CARCIOFI GRATINATI CON SALSICCIA E LIMONE

This past weekend the Cyberchef was on in the Swedish food blogosphere (horrible word blogosphere but it does describe what I mean so well) and as it was I who started the whole thing one year ago, I feel that I have to participate and most of the time I really enjoy it, especially as Paper Chef seems to have died and it is such a nice challenge! Anyway, this time the four ingredient were artichoke, lemon, chorizo or some other type of sausage and bread in any form and one would think that these relatively straightforward ingredients would make it easy but that was not the case at all, it took me ages to come up with a little menu but at least the three little dishes were fast to make! One of them was this:

OVENBAKED ARTICHOKES WITH SALSICCIA AND LEMON or CARCIOFI GRATINATI CON SALSICCIA E LIMONE

Artichokes
Salsiccia
Lemon zest
Bread crumbs

– Clean and trim the artichokes by taking away the outer leaves and cutting off the tops. Cut off the bottoms too so that they can stand up. Open up the heart of the artichoke so that there is space for the filling, take away some leaves if needed
– Boil and steam the artichokes until they are soft but not too soft and put them upside down on a towel so that the excess liquid drips off.
– Mash the meat of the sausage and then fry it in a skillet together with fine strips of lemon zest until it’s ready.
– Open up the artichokes and spoon some of the sausage into each of them, sprinkle breadcrumbs over and bake in a pre-heated oven (200° C/392° F) until golden.
-Serve!
