(ORANGE FLAVOURED) ALMOND AND CHOCOLATE CAKE (GLUTEN-FREE)

I did say that I was going to post about what happened to the chopped/ground almonds that I used in the Rice milk blanc mange that I made earlier this week and today’s the day. If I don’t post it now I might forget all about it. We had a lot of chocolates left from Easter, especially some dark chocolate eggs that were orange flavoured that my children didn’t like so I used them for this cake that went very well with them which was a bit surprising, just shows the fickleness of children and how arbitrary their rejection of food can be!

(ORANGE FLAVOURED) ALMOND AND CHOCOLATE CAKE (GLUTEN-FREE)

2 eggs
85 g /3 oz sugar
75 g / 2.6 oz butter
100g / 3.5 oz blanched almonds that have either been coarsely ground or finely chopped
150 g / 5.3 oz rice flour
150 g / 3.5 oz dark chocolate, I used some of our Easter chocolates that was orange flavoured

– Melt butter and chocolate.
– Whisk eggs and sugar until smooth and then add the melted chocolate, stirring all the time.
– Add the almonds and the rice flour and stir well.
– Pour the batter into a greased cake tin, I used a 20 cm / 8 in in diameter.
– Bake in pre-heated oven (175°C / 347°F) for about 20 minutes, you have to control it with a stick. It’s nice if it’s a bit ‘raw’ in the middle!
