I have on several occasions been asked about my children’s attitude to my food and all I can say is that they are far too normal for my taste. They have all gone through the various stages of “new things are dangerous”, “green things are dangerous”, ” red things are dangerous” etc. etc. and I have always found it amazing that they always seem to come up with a new danger. And then we have the diversity of taste, with three it’s almost impossible to satisfy all of them at once but I honestly don’t give a damn, now and then they just have to eat it anyway. As the years pass on, they seem to appreciate food more though, my oldest daughter, who is 15 this year and who has always been a vegetable and fruit hater, actually asked for more spinach the day before yesterday and I almost fell off the chair! I suppose you would call me hard and horrible but when they don’t eat something and I know it’s not because they hate it, they don’t have to eat it but I don’t make anything else to substitute it, I consider it their business if they want to go hungry. Life is full of things you have to mandare giù, or swallow or support, both edible and not so you better learn to do it. The sooner the better. I mean, it’s my duty to prepare them for the hardships of life isn’t it?

LEMONY ZUCCHINI WITH FARRO, PISTACHIO NUTS AND LEMON BALM or ZUCCHINI CON LIMONE E FARRO, PISTACCHI E ERBA CEDRINA

350 g/12.3 oz farro, you can also use brown rice
400 g/14.1 oz zucchini, diced
1 large lemon
4-5 tblsp chopped pistachio nuts
A small bunch of Lemon balm, finely chopped
1 clove of garlic, chopped
Salt
Olive oil

– Boil the farro in abundant salted water until soft, it usually takes 20-30 minutes.
– Meanwhile you first either grate the zest of the lemon or you use a lemon zester and put it in a pan with the garlic and some olive oil. Braise for a minute before adding the diced zucchini and go on braising until the zucchini is sift and golden.
– Add the pistachio nuts and the farro and then drizzle a little of lemon juice over it. Add the Lemon balm and stir.
– Serve!
