BEAN SOUP WITH FRESH ONION, PARSLEY AND BLACK PEPPER or ZUPPA DI FAGIOLI CON CIPOLLE FRESCHE, PREZZEMOLO E PEPE NERO
Time for something ugly! My last two recipe posts have been far too pretty to last so today I’m posting a very ugly soup. It would have been prettier if I hadn’t used a red Sicilian bean but a white bean like the cannelini bean for example. But did I think about that? No and this is the result. But the it tastes good at least! I love bean salad with fresh onion, parsley, black pepper, a little lemon and olive oil and for some strange reason I wanted to see if I could make a soup with that taste, I suppose I had the notion that I would reach a sort of sublimination of it somehow because I love soups too. I did get a halfway sublimation though, it did change from the solid form but not into gas, it got stuck as the liquid form it was supposed to skip. Anyway, I got a simple soup, extremely easy to make, mild and comforting to eat, I can hardly complain about that, can I?
BEAN SOUP WITH FRESH ONION, PARSLEY AND BLACK PEPPER or ZUPPA DI FAGIOLI CON CIPOLLE FRESCHE, PREZZEMOLO E PEPE NERO
Beans
Fresh onion, the milder the better in my taste
Parsley
Black pepper
Lemon
Salt
Olive oil
- Leave the dry beans to soak over night before you boil them (or skip that and boil them straight away but very slowly and longer) until very soft.
- Put the beans in a food processor together with sliced fresh onions, parsley and add some of the bean water. Blend until smooth.
- Heat it up if needed, add salt, black pepper and olive oil and serve with lemon wedges so that you can squeeze as much lemon juice you like in it!
