ASPARAGUS AND POTATO SALAD WITH SUN-DRIED TOMATOES, PINE NUTS AND BASIL or INSALATA DI ASPARAGI E PATATE CON PINOLI, POMODORI SECCHI E BASILICO

This morning I got up a quarter past five in order to drive my son to the bus that was taking him on a one-day school trip to Ravenna. How I envy him but he will probably not see or remember the most beautiful mosaics I have ever seen. Being a city with Byzantine background, it's full of wonderful blue mosaics that leaves me with a dull aching feeling of envy. I don't know who I'm envying because the are all found in churches and such open to the public but I want to have them here. In my home. But at least I can look at them here. I suggest that you do that too.

A potato salad is quite perfect for lunch and if you add some asparagus and basil you have a quite perfect spring salad. The pine nuts gives some texture and the finely chopped sun-dried tomatoes add a nice salty taste to it!

ASPARAGUS AND POTATO SALAD WITH SUN-DRIED TOMATOES, PINE NUTS AND BASIL or INSALATA DI ASPARAGI E PATATE CON PINOLI, POMODORI SECCHI E BASILICO

Asparagus
Potatoes
Fresh basil, chopped
Pine nuts
Sun-dried tomatoes, finely chopped
Lemon juice
Salt
Olive oil

- Dice the potatoes and cut the asparagus into short pieces and either steam or boil them in water.
- Meanwhile you mix the rest of the ingredients to a sort of vinaigrette.
- When the potatoes and asparagus are ready, you mix them with the vinaigrette and leave it all to cool down a bit.
- Serve!
