SWEET TOMATOES STUFFED WITH BELL PEPPERS, ZUCCHINI, CAPERS AND COUSCOUS or POMODORI RIPIENI DI PEPERONI, ZUCCHINE, CAPPERI E COUCOUS

Lately I have been doing a lot of last minute cooking which in my case means that I use ingredients that soon will be out of season, some of it you have seen here and some is still waiting to be done. And that's good but I can feel a growing craving for another type of food. I want more colourful vegetables, I need sweet tomatoes, peppers, zucchini-you name it and I want it! The other day the craving become too overwhelming so I made these little stuffed tomatoes; I had some couscous leftover, I had very sweet tomatoes and even a sweet bell pepper so I dived into making myself something that would put my cravings at peace for a while. But I can feel that they are beginning to scratch my mind again...

SWEET TOMATOES STUFFED WITH BELL PEPPERS, ZUCCHINI, CAPERS AND COUSCOUS or POMODORI RIPIENI DI PEPERONI, ZUCCHINE, CAPPERI E COUCOUS

Sweet tomatoes that are big enough to hold some stuffing
Red bell pepper
Zucchini
Capers, I prefer to use salted capers
Cooked couscous
Salt
Olive oil

- Cut the tops off the tomatoes and empty them of seeds etc. Keep these for later use.
- If you use salted capers don't forget to soak them in tepid water for at least 10 minutes.
- Cut the bell peppers and the zucchini into fine strips and braise these with some salt in some olive oil until soft and a little golden. Begin with the zucchini and throw in the pepper after 3-4 minutes.
- Add the couscous and the tomato seeds together with the capers and stir.
- Fill the tomatoes with the couscous mix and serve. Or make a salad of it all, you just chop the tomatoes, add them and serve it like that!
