This is my last entry for this month’s The Heart of the Matter-eating for life event. There are two reasons to why I’m submitting so many entries to my and Joanna‘s heart food event, one is that I can’t resist the challenge to make heart friendly finger food, and I can tell you that it’s not difficult, and the second is that in case there are few entries from other food bloggers, this being a very new event, at least I have something for the roundup this weekend. I have already received entries but I want more more more so please make me happy and send me an entry you too! The last day is the 22 of March so there’s still time!

Last week Kalyn of Kalyn’s Kitchen posted a recipe of Balsamic Chicken and Mushrooms that caught my attention, balsamic vinegar and chicken struck me as a perfect combination so when I wanted to make a finger food dish based on meat I decided to go for it. Lean meat is ideal as heart friendly food and what can be better than chicken breasts? It turned out to be a perfect little sweet and sour bite with the crunchy caper in the middle. ROSEMARY AND BALSAMIC VINEGAR MARINATED MINIATURE CHICKEN ROLLS WITH CAPERS or ROLLINI DI POLLO CON ROSMARINO, ACETO BALSAMICO E CAPPERI

Chicken breasts
Capers, I used ‘party capers’ that are bigger and still attached to the stem
Balsamic vinegar
Rosemary, preferably fresh
Salt
Olive oil

– Cut the chicken breast into strips and put these in a bowl together with balsamic vinegar, rosemary, some salt and a little olive oil. Leave them to marinate for at least a couple of hours. I forgot them until the day after…
– Take them out and let them drip of the excess liquid.
– Take a caper and put it at one end of the strip and then roll the strip until you have a roll. Stick a tooth pick through it to keep it together.
– Sauté the chicken rolls in a little olive oil on all possible sides until golden and cooked through
and take out the tooth pick before serving them. Add salt if needed.
