More food with colour, this simple and fast pasta dish is so good that I’m eating it quite often right now. Giving in to my craving for colourful food is not difficult and for once I don’t consider it my duty to resist it, how can I when it’s so healthy? Isn’t it nice when for once you want to do something that is good for you so that you don’t have consider whether it concords with your principles and convictions but you can just give in and enjoy? I love it! I wish my whole life was like that but I have made it into a moral minefield (or should I say a moral maze?), there’s always something that I have to consider and think about but on the other hand I sleep relatively well and when I lie awake in the night it’s not the moral questions of life that are keeping me awake…

PASTA WITH CARROT, SPINACH AND BALSAMIC VINEGAR or PASTA CON CAROTE, SPINACI E ACETO BALSAMICO

Fresh spinach
Carrots
Balsamic vinegar
Salt
Olive oil
Pasta, I used the rice pasta I had left from my Paper Chef adventure, that’s why it’s so white in the photos

– Rinse the spinach leaves well and tear them into pieces. Peel the carrots and once the skin is gone, go on peeling them until there’s nothing left, just a lot of carrot strips.
– Begin with braising the carrot strips in a skillet with some olive oil and after a couple of minutes you add the spinach and sauté it for a minute or two! Don’t forget the salt!
– Before adding the pasta you drizzle a little balsamic vinegar over the vegetables and then you mix it with the pasta and eat!
