ORANGE AND ANISEED COOKIES or BISCOTTI DI ARANCIA E ANICE

It feels a bit stupid to catch a cold when spring is here but so it is. Here I am on a Sunday morning with a lot of good intentions but feeling very low on energy so I think I just listen to my body today and not to my mind. Not so easy nowadays, I used to be so good at doing nothing but now I realize that I'm in constant move and I really find that sad. I regret my lost capacities but I haven't given in to it, today I'm going to pose resistance to the urge to do useful things and only do enjoyable ones. My anticold concoction is brewing and I have a pile of books waiting to be read-that's not bad at all.





ORANGE AND ANISEED COOKIES or BISCOTTI DI ARANCIA E ANICE

100 g / 3.5 oz salted butter
100 ml /0.42 cup sugar
1-2 tsp (or maybe even more) chopped or crushed aniseed seeds, one tsp just gives a hint of the flavour.
The grated zest of 1 orange (preferably organic)
2 tblsp freshly squeezed orange juice
3oo-400 ml / 1.3-1.7 cups flour
1 tsp baking powder

- Stir butter and sugar smooth in a bowl and add the chopped aniseed seeds, orange zest and orange juice. Mix well.
- Sift flour and baking powder and stir until you have a smooth dough.
- Form small balls that you put on a baking sheet and then press these down with a fork or whatever you feel like using.
- Bake in a pre-heated oven (175° C/347° F) for about 10 minutes.
