This is my first contribution to the newborn The Heart of the Matter-eating for life event that you can read about here or here. This month the theme is Finger Food and I’m happy to say that I have already been sent links to contributions but if you too participated it would make me even happier! It’s not difficult to cook heart friendly food, just reduce the animal fat, go for more lean meat, fish, cereals, fruit and vegetables and you are eating much healthier. You don’t have to become boring or cranky about your food, just more aware of the ingredients you use! I’m not at all a health food freak but moving to Italy and eating and reading about Mediterranean food have made me more aware of what I am putting into my mouth and especially what I feeding my children with! I don’t believe in food fundamentalism (or any fundamentalism for that matter) but I believe in eating well!

These mini cupcakes are sweet both to look at and to eat. I was surprised when my youngest daughter told me that they were buonissimi because she is in that age when it’s a bit dangerous to taste something new and unknown but I think it was the size that made her try them, they are dolls size and very cute. I have used farro flour (here and here) and I substituted butter with olive oil and reduced the amount of sugar a bit so if you feel that you want them very sweet, just add some more of it.

MINIATURE FARRO AND POPPYSEED CUPCAKES or MINIMUFFINS DI FARRO E SEMI DI PAPAVERO

2 eggs
200 ml / 0.85 cup farro flour but you can use other types of whole wheat or graham flours
100 ml / 0.42 cup sugar
4 tblsp good olive oil
2 tblsp poppy seeds
1 tsp vanilla extract
1 tsp baking powder

– Whisk egg and sugar before adding the other ingredients. Mix well so that you have a smooth batter.
– Use a teaspoon to fill up the miniature cupcake forms, mine have a 2,5 cm/1 inch bottom. Don’t fill them too much.
– Bake in a pre-heated oven (175°C/347°F) until golden, it takes about 5 minutes.
