
Sometimes I realize the visual power of food, when I made this salad I was somehow thinking about eating with my eyes. I wanted colours because I felt that colours meant vitamins, maybe it was yet another message from body to brain to tell that it needed something in particular. Or maybe not, maybe it was just me who got fed up with the bleakness of winter and just wanted to revolt. Who cares anyway, the salad was good and satisfied whatever was going on in my mind and body and that's what matters.

SALAD WITH RED CABBAGE, LAMB'S LETTUCE AND CARROTS or INSALATA CON CAVOLO ROSSO, SONCINO E CAROTE
Red cabbage
Lamb's lettuce
Carrots
Salt
Balsamic vinegar
Olive oil
- Take out the mandolin and slice the cabbage and the carrots into really thin and crunchy slices.
- Put them in a bowl together with the lettuce and toss them with a little balsamic vinegar, some olive oil and salt.
- Eat and enjoy.
