
Prepare yourself, I have a lot, and I mean a lot, of kiwi fruits so I have entered the kiwi fruit tunnel and this is the first installment of my travel journal! I like quinoa and I find that it is quite nice in sweet dishes as well so when I was standing there with a kiwi in my hand and my eyes fell on the box of quinoa that I have on the shelves it made me think of fruit salad, a kiwi and quinoa fruit salad with mint and pine nut honey. I added some oranges as well because I have some nice ones at home and guess what I had for lunch?

KIWI AND QUINOA FRUIT SALAD WITH MINT AND PINE NUT HONEY
2 servings
100 ml / 0,42 cup quinoa
2 tbsp sugar
2 kiwi fruits
1 small orange or 1/2 big one
1 tbsp chopped mint leaves
2 tbsp pine nuts
1,5-2 tbsp honey, I used acacia because it has a nice and mild flavour
- Rinse the quinoa, add the sugar to the water and boil until soft, it takes about 15-20 minutes. Drain it and leave it to get cold.
- Peel and chop the fruit and put the pieces in a bowl.
- Run the chopped mint leaves together with the pine nuts in a blender until they are chopped finely. Mix mint and nuts with the honey.
- Add the fruit and some of the mint and nut honey to the quinoa and mix it well.
- Serve in small bowl and topped with some more of the mint and pine nut honey.
