SCRAMBLED EGGS WITH ARTICHOKE STALKS
Yet another rather ugly dish but with nice taste. I actually post it because I want to put a spotlight on a forgotten delicacy, namely artichoke stalks. You now, the stalks that you cut away from your artichokes and throw away! Next time, don’t throw them away but use them in some nice dish! I like them like this, with scrambled eggs, but I also eat them raw and finely sliced in salads or I put them in vegetable soups. There are so many ways to eat them… When the stalks are raw, they taste a bit like a mix between artichokes and aspargus. The important thing is to peel them really well so that all the stringy parts are removed, it’s the tender heart of the stalk that you want!
SCRAMBLED EGGS WITH ARTICHOKE STALKS
Artichoke stalks
Eggs
Salt
Pepper
Olive oil or butter
- Trim the stalks well, peel away the stringy parts and then slice them very finely, preferably with a mandoline.
- Sauté in olive oil for a couple of minutes. Add salt.
- Add the eggs that you have whisked together a little bit.
- Stir all the time while you cook on low heat.
- When it’s ready , you grind some pepper over it and eat.
