It’s already the 1st of December!! Today I have bought the first Christmas gifts with two of my children for the third who wasn’t with us. And I just have to find new hiding places because now starts the guerrilla warfare, I hide and they seek, I usually win but there’s is only a certain amount of places where you can hide things in a house and as they get older, the little devils gets more ingenious so it’s really getting more and more like a war. But at least it keeps my brain alert four times a year, for Christmas and the birthdays.
I had some quinoa left over when I made this little avocado salad and as I wanted something with a crunchy texture I fried some quinoa and added it to the salad. And I have to say that it wasn’t a bad idea at all, I’ll use it in other dishes as well instead of fried bread crumbs or bread.

INSALATINA DI AVOCADO, FAGIOLI, POMODORI E QUINOA FRITTA or AVOCADO AND BEAN SALAD WITH TOMATOES AND FRIED QUINOA

1 avocado
2 ripe tomatoes
100-150 g / 3.5-5.3 oz white beans, cooked
4-8 tbsp quinoa, cooked
your favourite vinaigrette

– Cut the avocado in pieces, chop the tomatoes finely and mix these two ingredients with the beans.
– Fry the quinoa in olive oil, it pops a bit so be careful and when it is crunchy but still a bit soft, you take it up and drain the fat on kitchen towel paper.
– Mix it with the salad and add you favourite vinaigrette, I just used a little olive oil, a few drops of lemon and some salt. Eat.
