CHOCOLATE TOAST WITH CARDAMOM AND RASPBERRY JAM

This is a dangerous little dish, maybe you have already made it, I hadn’t but when the idea turned up in my head I just had to indulge. I found myself some good raspberry jam and made it. A small portion. Because if it had been bigger I would have eaten until nausea, I’m sure of that, and then I wouldn’t be able to eat it or even think about it again. I’m going make it again soon. Try it if you haven’t done it yet, any bread will do, plain white or whole grain, with or without gluten! Now I’m off to cook my ears off, we have people for lunch and we’re going to do some serious eating!

CHOCOLATE TOAST WITH CARDAMOM AND RASPBERRY JAM

Slices of bread, on the thick side
Cocoa powder of good quality
Ground cardamom
Sugar
Raspberry jam
Butter, preferably salted

– Mix cocoa powder with sugar and a good pinch or two of ground cardamom.
– Cut the edges from the slices of bread and fry them in a fair amount of butter.
– When they have become slightly crunchy you take them out and turn them in the cocoa and sugar mix. Both sides have to be covered in this bounty.
– Spoon some of the raspberry jam on top and oh how I envy you: eat!
