PERSIMMON SMOOTHIE WITH , MINT AND LIME

I promise, promise that this is my last persimmon recipe but when I saw Susan’s post on smoothies on her blog Fatfree Vegan Kitchen I just had this vision and you do understand how important it is to try to realize these when they happen, don’t you? So I made myself a smoothie that was smoother than smooth! The mint and the lime lifted it up and the wonderful Greek yoghurt I used made into velvet. You can of course use other types of yoghurt as long as it is natural yoghurt but I think that the Greek is the best. Yes it is fat but I prefer to eat less but eat well so I buy that when I feel like having some plain yoghurt and honey, one of the most divine things on earth… And now I know that it makes a divine smoothie as well.

PERSIMMON SMOOTHIE WITH , MINT AND LIME
serves 2

2 persimmons, I used the fuyu type
150 g / 5.3 oz natural yoghurt, preferably Greek
Milk
20-30 leaves of mint
lime juice
honey if needed

- Peel the persimmons and cut them into pieces.
- Put these and the mint leaves into a blender and run until smooth.
- Add the yoghurt and run it until it is properly mixed, then you add milk until it has the consistency you like.
- Add lime juice little by little until it tastes good and if you want it sweeter you add honey as well.
- Enjoy!
