ZUPPA PICCANTE DI BROCCOLI E FAGIOLI AL ROSMARINO or HOT BROCCOLI AND WHITE BEAN SOUP WITH ROSEMARY

When I wrote yesterdays post I could see how this blog has evolved since I started it; in the beginning I just posted recipes and that was more or less it whereas now I realize that I write my posts more or less like letters in which I include a recipe that I like. Over the time I have gained both self confidence when it comes to food blogging in a foreign language and more confidence in that what I write is of some kind of interest to you, if not always at least now and then. I also realize that I like this mix between life and food; the food gives me a reason to cook and to experiment and the act of writing satisfies my more verbal needs. Or maybe it more a need to communicate, yes I think that is exactly what it is. And that is why I find blogging is such a wonderful invention, it is a relatively democratic way of making your voice heard and to have a forum where you can express opinions and thoughts. And your recipes.
I also want to thank you for all the nice response I get from you, thanks for all the encouraging comments and to those who doesn’t comment but continue to come here every day or every week or just now and then. You are all one big reason to why I continue to blog!

ZUPPA PICCANTE DI BROCCOLI E FAGIOLI AL ROSMARINO or HOT BROCCOLI AND WHITE BEAN SOUP WITH ROSEMARY
2 servings

200 g / 7 oz broccoli
1 small onion
125 g /4,4 oz cooked white beans
1 dry peperoncino (optional)
1 tsp chopped fresh rosemary
500 ml /2,1 cups stock or water
2-3 tbsp fresh cream
salt
extra-virgin olive oil

– Heat up some olive oil together the crumbled peperoncino. Add the chopped onion and the broccoli that you have divided into smaller pieces.
– Let it braise for about 5 minutes before you add the beans and the rosemary. Go on braising for 2 more minutes and then add the stock. Check if it needs salt.
– Leave the soup to simmer for 15-20 minutes and then you add the fresh cream and let it boil rather hard for 5 minutes.
– If the broccoli and the beans haven’t become mushy you can mash them lightly with a spoon befor you serve.
