
I love horse radish and when I saw it at the market yesterday, I just had to buy some. I love how it starts pricking in my nose when I smell it or eat it and I love its slightly sweet taste but I haven't seen it for a long time. Or maybe I haven't been looking. Whatever, it feels good to have some here now so I can go and smell it whenever I want. And I'm playing around with a lot of ideas on how to cook with it, here's one:
FRITTATINE CON RAFANO E PATATE or FRITTATINE WITH HORSE RADISH AND POTATOES
6 pieces
4 eggs
4 tblsp freshly grated parmesan
2 potatoes
3-4 tsp freshly grated horse radish
Salt
extra-virgin olive oil
- Whisk eggs and parmesan lightly.
- Peel and grate the potatoes on a 'coarse' grater. Sauté them lightly in some olive oil. Salt them and stir all the time so that you don't end up with rösti. Let it cool down a bit before mixing it with the eggs.
- Grease 6 cupcake forms with the oil that's left in the pan.
- Grate the horse radish, mix it quickly with the batter and distribute it into the forms.
- Bake in 225° C / 435-440° F for 8-10 minutes.
- Serve warm or cold and if you want, sprinkle some freshly grated horse radish over them.
