PEPERONI E VERDURE MISTE CON SALSICCE E PEPERONCINO or BELL PEPPERS AND MIXED VEGETABLES WITH SALSICCE AND CHILI PEPPER

The temperature is going down here and I am soo happy! Still warm but at least I can cook without melting down completely. But it is in the summer that I really feel that I am in Italy, that I actually feel very aware of where I am and where I live nowadays. I don’t know if this is based on my first impressions of Italy (obviously during the summer) or because Italy is quintessentially summer. Whatever, I like Italy hot but not too hot!

PEPERONI E VERDURE MISTE CON SALSICCE E PEPERONCINO or BELL PEPPERS AND MIXED VEGETABLES WITH SALSICCE AND CHILI PEPPER
2 medium servings

3-4 potatoes
1 medium onion
2 medium zucchini
1 medium-large bell pepper, I used ½ red and ½ yellow
2 salsicce, Italian meat sausages, cut into thick slices.
½ chopped fresh chili pepper of the long type
Black olives (optional)
Salt
Olive oil

- Dice the potatoes and chop the onion and begin braising them together with the salsiccia in some olive oil and the chili pepper in a pan.
- Add the zucchini cut into coins they are thin and half coins if thick. Add salt and continue to braise.
- Cut the bell pepper into short strips and add it to the pan. Go on braising until the potatoes, the onion and the zucchini are golden and a bit crispy and the pepper is soft but still not too soft. If you want to include olives, you throw them into the pan a couple of minutes before it-s ready.
- Eat it warm or cold, it’s good both ways!
