INSALATA DI RUCOLA CON PROSCIUTTO CRUDO, AVOCADO E PINOLI or SALAD WITH RUCOLA, PROSCIUTTO CRUDO, AVOCADO AND PINENUTS

Still no internet connection for us, in a way quite relaxing but I get a bit frustrated when it is supposed to be so simple and then it´s not. I want my connection now! But I suppose I could and should see this as some kind of training, patience is not always so easy to achieve but this one way of many!
Yesterday we were invited for lunch by friends and we had a lot of nice things to eat but there was especially a potato salad that caught my tastebuds and as soon as I´m back home in my kitchen I just have to try to made something like it. But until then you have to be content with this simple salad that I made some days before leaving Italy. Instead of adding the prosciutto crudo as it was I fried it a little to get something crispy to balance the soft avocado.

INSALATA DI RUCOLA CON PROSCIUTTO CRUDO, AVOCADO E PINOLI or SALAD WITH RUCOLA, PROSCIUTTO CRUDO, AVOCADO AND PINENUTS

Fresh rucola
Thin slices of prosciutto crudo
Avocado
Pinenuts
Salt
Vinegar
Olive oil

– Fry the prosciutto crudo gently in a non stick pan without using any fat, when it is getting crispy you take it out and leave it to drip off any excess fat on kitchen towel paper. Cut the slices into pieces.
– Cut the avocado into pieces and put these into a bowl together with the rucola and the pinenuts and after adding a little vinegar and olive oil you toss it all together.
– Check the salt and serve.
