FRIGGITELLI RIPIENI DI QUINOA, ZUCCHINI E PARMIGIANO or FRIGITELLI FILLED WITH QUINOA, ZUCCHINI AND PARMESAN

This is my last Weekend Herb Blogging contribution for a while because on Tuesday we’re off to Sweden for three weeks. I will continue to post when I’m there but I need to disconnect from everything, I really feel that I need to think a bit, relax a bit and socialize a lot! I am sure that I will blog photos anyway and even if I am not going to cook that much, I will sure eat a lot-I might even start doing some pure Swedish food blogging, who knows! But now I am still here and I am still cooking.
This is a type of pepper called peperoncini dolci or frigitelli in Italian; it is not hot at all, it taste more like green bell peppers but they are not so meaty and you eat them whole, seeds included. I usually cook them in a hot tomato sauce but it’s quite common to fill them with various things so this time I filled them with quinoa, zucchini and grated parmesan cheese and braised them in white wine and some hot chili (optional). I can recommend them even if it was a bit tricky to fill them with the quinoa mix!

FRIGGITELLI RIPIENI DI QUINOA, ZUCCHINI E PARMIGIANO or FRIGITELLI FILLED WITH QUINOA, ZUCCHINI AND PARMESAN

8 frigitelli
1 dl / 0.5 cup quinoa
1 medium zucchini
4 tblsp freshly grated parmesan cheese
Some chopped fresh chili pepper
½ dl / 1.7 fl oz white wine
½ dl / 1.7 fl oz water
Salt
Olive oil

– Rinse the quinoa well before boiling it in salted water for about 15 minutes.
– Dice the zucchini finely and sauté them in some olive oil until they are soft and golden, don’t forget to salt them.
– Mix the quinoa and the zucchini before you add the parmesan.
– Cut each frigitello open lengthwise and fill them with the quinoa mix.
– Warm up the oil together with the chili, add the frigitelli and start braising them. After a short while you add wine and water and let it simmer until they are cooked. Turn them around now and then.
– Serve them warm or tepid, they are good both ways!
