
I think that one of the more attractive aspects of summer is the fresh fruits and vegetables that you can get when they are meant to be ripe. I do like to eat them in different ways, like this for instance, but it’s so hot here now that just the thought of using the oven more than really necessary prevents me from making a lot of nice fruit dishes. So I eat the fruit and berries as they are but there with little additions here and there. Fresh, ripe and juicy apricots are really a treat in themselves but I just couldn’t resist the temptation to add some of my lavender honey and some beautiful green pistachio nuts to a bowl of apricot pieces! It’s almost silly to post a recipe but here it is anyway!

ALBICOCCHE CON MIELE DI LAVANDA E PISTACCHI or APRICOTS WITH LAVENDER HONEY AND PISTACHIO NUTS
4 servings
10-12 ripe and sweet apricots
2-4 tbsp lavender honey, it depends on your sweet tooth
4-6 tbsp pistachio nuts
- Rinse and cut the apricots into pieces, put them in a bowl or straight into individual bowls.
- Add the honey and the nuts. Mix and leave it for a little while.
- Stir before serving.
