
To eat a ripe summer tomato is pure joy, finally they are as sweet tasting and savoury as they are meant to be! I make my tomato sauce with fresh tomatoes all through the year but it is only in the summer that I make a lot and deepfreeze it. I have been toying with the idea of making some sort of tomato sauce to use in sweets and this weekend I managed to make a quite tasty one that I will make more of so that I can start experimenting with ways of using it in cakes and desserts. SALSA DOLCE DI POMODORI, CARDAMOMO E ZENZERO or SWEET TOMATO SAUCE WITH CARDAMOM AND GINGER
½ liter chopped tomatoes, remember that it has to be ripe, sweet and tasty ones
1-2 tsp grated fresh ginger
1 tsp ground cardamom
2-3 tbsp sugar, it depends on how sweet the tomatoes are and how sweet you want it to be!
- Put the tomatoes in a pan, add the sugar and the spices and let it boil slowly for at least 20 minutes. Stir often.
- When it has thickened it is ready.
- Pass it through a food mill or a sieve and leave it to cool. If you think it’s not sweet enough you just add some more sugar.
- Enjoy it!
