This is really in the last minute but I have a feeling that time really is elastic, that the theory of time as a sort of fluid concept that changes is right because this month seems so much shorter than last month. I’m sure that you know what I mean, there are days that seem to be longer than others as if they are stretched out so that the hours and minutes last longer and other days passes in a blink of an eye with hours and minutes obviously half as long as usual. I better get back to what I really intended to post about, i.e. my last minute contribution to the June edition of In My Rasoi, before I start sounding too weird. This month it is my dear friend Paz who is hosting it and she has decided on the theme rice. This dish is my second attempt because I made a dessert with rice the other day but it is so hot here that when I took it out to take the photos it just melted. And it wasn’t ice cream so you can imagine what it’s like here right now. I will make it again some other time because it was quite nice even though it looked like something my dog would refuse to eat on the pics! RISO INTEGRALE CON CECI,CIPOLLA, SEMI DI SENAPE E POMODORI AL FORNO or BROWN RICE WITH CHICK PEAS, ONION, MUSTARD SEEDS AND ROASTED TOMATOES
4 abundant servings

400 ml/ 1,7 cup brown rice
6-8 tomatoes
400 ml/ 1,7 cup cooked chick peas
4- 6 onions
8 tsp yellow mustard seeds
Salt
Olive oil

– Cut the tomatoes in quarters or sixths and put them in an oven-proof pan. Sprinkle some salt and, if needed, a bit of sugar. I added a bit of oregano as well. Bake in a pre-heated oven at 150°C/300°F.
– Put the rice to boil. When it is ready, it usually takes at least 40 minutes, you check the tomatoes and if they don’t look ready, lower the temperature to 100° and let them bake on until ready.
– Sauté the chopped onion in some olive oil, after a couple of minutes you add the mustard seeds and the chick peas.
– When the onion is transparent, you add the rice and go on cooking for 4-5 minutes.
– Add the roasted tomatoes, check the salt and serve.
