POMODORINI CON AVOCADO E CETRIOLO or CHERRY TOMATOES WITH AVOCADO AND CUCUMBER

I think that it is quite evident that for 9 years of my life I didn’t eat meat, I post a lot of recipes of vegetables and not that many of meat. The reason to why I started eating it again was that after one year of breastfeeding our first daughter I suddenly began to crave meat; for nine years I had never been tempted but now I just felt the need to eat it so I caved in to the craving because I decided to trust my body and the message it was sending me. I think I did the right thing. We do eat meat several times every week and I serve meat or fish to my children once a day but I must confess that I don’t put that much effort into cooking meat for me and Marco. But now I will have to change because for the first time of my life I’m suffering from an iron deficiency, nothing serious but it has to be cured so I have now decided to make a real effort, I will have to find and invent some new and appetizing meat recipes. I like meat actually so it won’t be so difficult, I just have to change my attitude... But I’m not starting today, today I’m posting a finger food suggestion instead!


POMODORINI CON AVOCADO E CETRIOLO or CHERRY TOMATOES WITH AVOCADO AND CUCUMBER

Avocado
Cucumber
Cherry tomatoes
Salt
Smoked Spanish paprika

- Cut the tomatoes into two parts and spoon out the seeds that you put into a small bowl.
- Peel the cucumber and cut it into very small dice and add it to the bowl.
- Peel and mash the avocado meat and mix it with the rest. Add salt.
- Spoon the avocado mix into the empty tomatoes. I sprinkled some smoked Spanish paprika on top of half of them but it’s not necessary.
