INSALATA PICCANTE DI COUSCOUS, PESCE E VERDURE or SALAD WITH COUSCOUS, FISH, VEGETABLES AND SAMBAL OELEK

A real heat wave here with 36-38° centigrades here and around 40° down south. I tend to slow down very much when it is like this and sit and ponder upon things to cook, like my In My Rasoi contribution, this month it is hosted by Paz and it’s about time to send in your contributions as well as the end of June is closing in. The theme is rice in any form and I have invented a recipe in my head so today I’m going to try it out . I really hope it will work in real life as well. I often make up wonderful things in my head that falls flat and flops out IRL when I’m standing there in my kitchen trying them out. Time will show, I’ll post about it if and only if it turns out well.
But today I’m posting a recipe of a couscous salad with fish and vegetables, great to eat when it is as hot as it is here.

INSALATA PICCANTE DI COUSCOUS, PESCE E VERDURE or SALAD WITH COUSCOUS, FISH, VEGETABLES AND SAMBAL OELEK
Ca 4 servings

500 g couscous
350 g fish
½ cucumber
1 medium red or yellow bell pepper
1 fresh or at least mild onion
10-12 cherry tomatoes
2 tbsp finely chopped parsley
1-2 tsp or more of sambal oelek (hot chili paste)
Salt
Mild vinegar
Olive oil

– Cut/dice the cucumber, the bell pepper and the onion into fairly small cubes and put them into a large bowl together with the parsley.
– Divide the tomatoes in two or in four and put them in the bowl. Add salt, vinegar and olive oil and leave it to marinate.
– Cook the couscous and leave it to cool off a bit.
– While it’s cooling down, you fry the fish in some oil and put it to drip off on some kitchen towel paper before adding it to the vegetables. Obviously you cut the fish into pieces first.
– Add the sambal oelek, stir well and the you add the couscous.
– Mix well and serve!
