Today most Swedes around the world celebrate Midsummer. I’m not. If I were in Sweden I think I probably would but not here. It’s going to be the same old Friday pizza tonight, well not actually the same because I do make new ones each week but the tradition is old!
I made salsa verde earlier this week and I still had some left over to experiment with so I made a mushroom frittata with salsa verde in it and it turned out quite tasty! And easy to make…



FRITTATA CON FUNGHI E SALSA VERDE or FRITTATA WITH MUSHROOM AND SALSA VERDE
1 small on

3 eggs
5-6 fresh mushrooms
2 tbsp freshly grated pecorino Romano
2-3 tbsp salsa verde
salt
extra-virgin olive oil



– Whisk the eggs, the grated cheese and the salsa verde lightly.
– Sauté the mushrooms in some oil until golden in a pan.
– Pour the eggs into the pan and fry on both sides until ready.
