EoMEoTE 16 FRIED EGG AND BREAD SALAD WITH FARRO, MOZZARELLA AND GHERKINS

This month I have decided to participate in the End of Month Egg on Toast Extravaganza organized by Cook Sister! (thanks for organizing!!)and this month’s theme is “The Da Clucki Code - a parody in some shape or form of the Da Vinci Code”. I have read the book and I did not like it. I read it because I was having so many heated discussions about it without having read a line so I thought that maybe it was time to be able to back up my arguments and boy did I find a lot to use! I stopped counting the factual mistakes on page 76 and finished it just because I had to. In case. Anyway, I have removed it from my mind and I don’t really remember much anymore but I do remember that they find this guy killed in the Louvre and that he lies spread out inside a circle, just like Leonardo Da Vinci’s universal man (it’s just that Dan Brown ‘forgets’ that there should be a square too, outside the circle because it obviously doesn’t fit in with his own interpretation…) So here he is, on a plate and made by two of the ingredients of my EoMEoTE contribution: egg and small gherkins!



FRIED EGG AND BREAD SALAD WITH FARRO, MOZZARELLA AND GHERKINS
1 abundant serving

1 egg
1 slice of stale bread
10 small gherkins
100ml/0,42 cup already cooked farro or emmer
½ mozzarella
Chopped parsley
Vinegar
Pepper
Salt
Olive oil

- Dice the bread and fry it in some oil, let them drip off the excess fat on kitchen towel paper. Use the same oil when you fry the egg.
- Cut the fried eggs into pieces and put them in a bowl together with the bread, the farro/spelt and the diced mozzarella.
- Whisk salt, pepper, vinegar, olive oil and the chopped parsley and pour it over the salad.
- Serve.
