
Today I’m spending the whole day in the kitchen, I have even the computer here today because it’s grey and boring outdoors and the others are watching a) Formula 1 and b) the final of the tennis tournament in Rome, it’s between Federer and Nadal if you are interested. I’m not. I rather bake sweet buns for the sport fanatics and try out new dishes here in the kitchen but I’m considering retiring to my bed for a while… it’s Sunday after all and a time for rest.
I found some asparagus in the fridge and made myself some pasta for lunch, no traditional Italian Sunday lunch here today, everyone doing their things independently of the others which can be quite relaxing now and then. And they didn’t want to share the pasta with me, bad luck for them because it was nice! Oops, now I am doing a Peter Wells, telling you what I had for lunch…
PASTA CON ASPARAGI E PESTO or PASTA WITH ASPARAGUS AND PESTO
4 servings
400-500 g/14,1 -17,6 oz pasta
1 bunch of fresh asparagus
1-2 tbsp pesto
Salt
Olive oil
- Clean the asparagus stalks, peel them if needed and cut them into pieces.
- Sauté the asparagus in some olive oil, add some salt and continue until they are soft. If the stalks are much thicker than the tips, you keep the latter aside and add them when the rest is about half done.
- Mix the asparagus and the pesto well before you add the pasta and serve it!
