MANGO AND QUINOA CREAM WITH LEMON BALM

I have been buying a lot of mangos lately, I have no idea why, I just have to buy one or two every time I do my food shopping. Compulsive shopping. So I have to come up with some recipes even if we prefer to eat them like they are. This particular dish came into existence for the Swedish edition of the Paper Chef, I had some boiled quinoa left and a whole mango so I made a mango and quinoa cream. I think quinoa is excellent in sweet dishes, I have to use it more often and try out new recipes. Maybe we should start the quinoa challenge to see where the limit is! Hmmm…maybe I will, what do you think, would you be interested in a once and no more challenge with quinoa?

MANGO AND QUINOA CREAM WITH LEMON BALM

1 mango
1 dl cooked quinoa
3 dl water
3-4 tbsp acacia honey
6 tbsp Maizena or cornstarch
1 branch Lemon balm

- Peel the mango and cut it into pieces that you run in a blender until smooth.
- Put mango puree, water, quinoa and honey in a pan. Mix the Maizena/cornstarch in a bit of water before adding it and throw in the Lemon balm as well.
- Let it simmer until it has thickened into a cream, pick up the Lemon balm and pour the cream into one big or 4 small bowls.
- Let it cool before serving.
