INSALATA DI FAVE FRESCHE E PECORINO or FRESH BROAD BEAN SALAD WITH PECORINO

Last weekend I bought a big bag of fave or broad beans because I wanted to make a purée out of them but in the end it didn’t turn out like that at all. I had bought 1 ½ kilo (which is about 3,3 pounds) but after I had shelled them and taken away the coating of the bean, I was left with a mere 75 g, (about 2,6 ounces) one twentieth of what I began with! I didn’t even dare to think how much purée would come out of that… But they had this wonderful green colour and the taste was mild and extremely pleasant so I kept them in a small bowl in the kitchen for some hours before I managed to decide what to do with them. Here in Tuscany, the traditional way of eating fave is to eat them raw with some fresh pecorino cheese and pepper and in the end I decided to make a little salad with them, echoing the Tuscan tradition.


INSALATA DI FAVE FRESCHE E PECORINO or FRESH BROAD BEAN SALAD WITH PECORINO

Fresh fave or broad beans, shelled and de-coated, I suggest a bit more than my 75 g!
Pecorino cheese but you can use some other cheese that has fairly similar taste.
Freshly ground black pepper
Lemon juice
Salt
Olive oil, virgin of course

– Put the beans in a bowl and add the pecorino cheese. You can either cut or break it into small pieces or use a potato peeler and shave off flakes.
– Grind as much black pepper you want over the beans and sprinkle some drops of lemon juice before you pour some olive oil over the whole.
– Mix well and serve!
