INSALATA CON RAVANELLI, CETRIOLO E SCAGLIE DI PECORINO ROMANO or SALAD WITH RADISHES, CUCUMBER AND SHAVINGS OF PECORINO ROMANO

Today’s salad was inspired by the incomparable Cookiecrumb of I’m Mad and I Eat who posted about salad dressing and she made me really hungry this morning when I read it, well, maybe not really hungry but a trifle peckish for a salad. But not with the types of dressings she was describing but more something she probably makes when she cooks, i.e. a easy and home made one. It wasn’t actually the dressing I wanted, I just wanted a fresh salad because it’s getting hotter here and above all, the humidity of the air is beginning to be felt. And suffered when it comes to how I feel about it. So I made myself a tiny salad for lunch to go with some bread etc. and I can tell you that there will be quite a few posts on salads from now on…


INSALATA CON RAVANELLI, CETRIOLO E SCAGLIE DI PECORINO ROMANO or SALAD WITH RADISHES, CUCUMBER AND SHAVINGS OF PECORINO ROMANO

Radishes
Cucumber
Shavings of pecorino romano
Balsamic vinegar/Aceto balsamico
Virgin olive oil
Salt

- Slice the radishes and dice the cucumber and put them a bowl.
- Add the pecorino shavings and mix.
- Whisk the balsamic vinegar and the oil, if you like you can add some salt but remember that pecorino romano is quite salty!
- Pour the vinaigrette over the whole, toss it and serve!
