INSALATA CAPRESE MUTANTE CON AVOCADO or CAPRESE SALAD WITH AVOCADO (MUTATED VERSION)

One of the classic Italian starters that you find almost on almost every normal restaurant menu in the summer is Insalata Caprese which is mozzarella, preferably di bufala, ripe, sweet tomatoes, fresh basil leaves and a very good virgin olive oil. It is a wonderful dish in its simplicity and I feel a bit as if I am committing a sacrilege by presenting this mutation of it! But I love Caprese and I love avocado so I just couldn’t resist the temptation of bringing them together. But I cut the tomatoes and the mozzarella into pieces instead of slicing them and I even use a little dash of mild vinegar to distinguish this salad from the real stuff! Fresh basil is quite importation but I have used fresh oregano as well on occasions when it has been the only fresh herb that I could lay my hands on and it works quite well.

INSALATA CAPRESE MUTANTE CON AVOCADO or CAPRESE SALAD WITH AVOCADO (MUTATED VERSION)

Ripe, sweet tomatoes
Mozzarella, preferably di bufala
Avocado
Fresh basil
Very good olive oil
Mild vinegar
Salt

– Whisk oil, a little vinegar and salt together and put it into a bowl. Add the shredded basil leaves.
– Cut the mozzarella into pieces and put them into the oil, stir and let them soak.
– Meanwhile you cut the tomatoes and the avocado and add them to the bowl. Mix well and leave it all to marinate a little while before you serve it.
