
I haven’t posted any gluten-free baking recipes lately, many of my food recipes are naturally gluten-free but that’s because they just are like that, not because I’m making an effort of posting gluten-free food and it just shows that we all live partly gluten-free. Today I do have a recipe of gluten-free chocolate cookies, very light and simple to make and quite popular in this family which just shows that gluten-free doesn’t necessarily mean strange tasting or boring.
BISCOTTI DI CIOCCOLATA SENZA GLUTINE or GLUTEN-FREE CHOCOLATE COOKIES
150 gr salted butter
2 dl dark brown sugar
1 egg
5 dl corn starch
4-5 tbsp cocoa powder, it depends on the quality
- Cream the butter and the sugar.
- Add the egg, mix it all very well.
- Sift the corn starch and the cocoa powder into the mixture and stir well.
- Form small balls and put these on a baking sheet. Use a fork to flatten them with.
- Bake in a pre-heated oven (175° centigrades) for about 10 minutes.
