Today is an interesting day because today’s the last day of the elections, at 15.00 the polling stations close and we will finally get the exit polls! So I’m crossing my fingers and hoping for the best!
A gluten free banana cake with almond flour is today’s post. I end up ever so often with bananas that are either overripe or refused because of brown spots so I have begun to experiment with different banana recipes. I’m not a great fan of banana cakes (or is it maybe called banana bread?) myself but I’m beginning to like them which just shows that it is an acquired taste. Or maybe I have just have realized that I better like them…


TORTA DI BANANE E MANDORLE or BANANA CAKE WITH ALMONDS (GLUTEN FREE)

4 eggs
1 ½ dl sugar
4 tbsp golden syrup
2 ripe bananas
75 gr salted butter, melted
100 gr almond flour or blanched almonds that you run in a blender
3-4 dl rice flour, it depends on how big the bananas are
1 tsp baking powder

– Mix eggs, sugar and syrup.
– Mash the bananas very well, add them and the melted butter to the eggs, mixing it well.
– Add almond flour, rice flour and the baking powder and stir until smooth.
– Put it into a cake tin of your liking and bake it in a pre-heated oven (175° centigrades) for approx. 25-30 minutes.
