
I had such sweet tasting little tomatoes that I just felt that I had to use them in some way in order to enjoy them properly! So I made these little bean filled tomato boats, simple but nice to eat as a healthy snack now when it is getting warmer and you are a trifle peckish! I always loved that phrase: “a trifle peckish” was what one of the characters, tall and very thin if I remember right, of The Balcan Trilogy by Olivia Manning kept saying all the time, I can’t remember much more of the book but that phrase has stuck in my mind for over 25 years! I have it upstairs, maybe I should read it again to see what he actually gets to eat…
POMODORINO CON FAGIOLI E PORRO or TOMATOES WITH BEANS AND LEEK
Small and sweet tomatoes
Cooked beans of a type that you like, preferably not too big.
Some finely chopped leek
Some lemon juice
Salt
Black pepper
Olive oil
- Spoon out the seeds and put them in a small bowl, add leek, beans, salt, pepper and some drops of lemon juice. Mix well.
- Fill the tomatoes with the beans and eat!
