FAVE CON POMODORI SECCHI, VINO BIANCO E TIMO or FAVA BEANS WITH SUNDRIED TOMATOES, WHITE WINE AND THYME

I have been waiting for this moment for a while now but at last I have found the first fresh fava beans in the shops! I can get frozen ones and even if they are quite ok, it’s not the same. I like the feeling of opening up the pods and feel the furry inside when I pop out the beans…
The fava bean has a particular taste I find despite the fact that it has a kind of low key taste, don’t tell me how that adds up, maybe it’s only me having strange taste buds! In Tuscany you usually eat the beans raw with a good pecorino cheese and I can recommend that, just remember to peel of its outer layer before eating it. But today I wanted to make my fava beans with thyme, sun dried tomatoes and white wine! I had them with quinoa but they are great as they are.

FAVE CON POMODORI SECCHI, VINO BIANCO E TIMO or FAVA BEANS WITH SUNDRIED TOMATOES, WHITE WINE AND THYME
1 large serving or 2 small

200 gr de-podded fava beans
2- 3 halves of sun dried tomatoes
1-2 tsp chopped fresh thyme
1 small clove of garlic
White wine
Salt
Olive oil

– Sauté the garlic and the thyme for some minute before you add the fava beans, the sun dried tomatoes that you have cut into small pieces. Don’t forget to salt. Continue to sauté for about five minutes.
– Add the white wine, it should more or less cover the beans, and let it simmer until it is dry. Stir now and then.
-Ready, simpler than this is impossible!
