ZUCCHINE GRATINATE or OVEN BAKED ZUCCHINI

We are having a vegetable phase here, some meat yes but for some reason we prefer vegetables at the moment and nothing wrong with that, I like cooking vegetables, I prefer it to cooking meat actually! Anyway, as I don’t have that much time today, here’s the recipe to oven baked zucchini!



ZUCCHINE GRATINATE or OVEN BAKED ZUCCHINI
2 people

2 largish zucchini
2-3 tomatoes or 2 dl tomato sauce
1 clove of garlic
50 gr grated pecorino cheese, preferably pecorino from Sardinia if you can find that.
2 tblsp bread crumbs
Salt
Olive oil

– Divide the zucchini lengthwise and scoop out the inside so that they look like boats.
– Bake them in the oven (150° centigrades) for 20 minutes.
– Meanwhile you chop the scooped out zucchini meat and fry it in some olive oil and garlic, add some salt.
– Let it cook for 5 minutes before you add the chopped tomatoes or the tomato sauce. Leave it to simmer for 15 minutes, don’t forget to stir now and then. When ready, you leave it to cool down a little.
– Grate the pecorino and add it to the zucchini and tomato mix together with the bread crumbs, stir well.
– Now you spoon it into the pre-baked zucchini boats and put them into the oven again, this time in 175° centigrades. Bake them for 25-30 minutes.
– Serve them hot or tepid.
