I’m having problems with my kitchen, the kitchen drain is blocked somewhere outside my reach and my gas cooker is slowly dying so now I’m off trying to find a new one, wish me luck as it is a particular type of cooker and I bet I won’t find it easily….

But I’m leaving you with a recipe of Black Pepper and Cognac Chicken, easy and full of flavours. I bought my chicken of my butcher as he has the best ones around here, firm and healthy ones with a lot of flavour! Unfortunately I was so hungry that I forgot to take a photo before the dinner so what you see is what was left, at least for a little while!



POLLO AL PEPE E COGNAC or BLACK PEPPER AND COGNAC CHICKEN

1 chicken
Lots and lots of ground black pepper
1 – 1 ½ dl cognac
Salt
Big slab of butter

– Cut the chicken into smaller pieces, leaving the legs and the wings as they are, I usually cut the breast and thighs into 8 pieces.
– Pat salt and a lot of black pepper onto the chicken pieces before putting them into a pan with the hot butter
– Brown the chicken before adding the cognac and then you leave it to cook for 30-40 minutes, turning the pieces over now and then.
– Serve it hot, we hat it with a salad with a lot of fresh vegetables.
