Life has improved immensely since yesterday evening because now I have a new built in gas hob! Finally! I have been waiting for it to arrive for two weeks and when it did, it took them several hours to install it because of some problems and I was beginning to feel slightly worried when it finally came to life around nine o’clock yesterday evening! Imagine what it feels like to be able to use more than two gas burners at a time because for the last months I have had to put weights on the knobs in order to make them work, not very convenient, I can tell you that, when you have to cook for a family of five with different tastes and preferences… I almost regret that we’re off for Milan tomorrow for 3-4 days of intensive social life, now I really feel like inviting a lot of people and make a big, noisy lunch! But I think about the nice people I’ll see and the food I will eat and all the photos I hopefully will take and I feel quite happy anyway. I’ll post tomorrow as well but then I’ll take a small break to see what life is like without blogging! Did I exist before I started?


PASTA CON PANCETTA AFFUMICATA E ORIGANO or PASTA WITH SMOKED PANCETTA AND OREGANO

400-500 g/14,1 -17,6 oz pasta
100 g/ 3,5 oz smoked pancetta, diced
4-5 ripe tomatoes
1-2 pinches of oregano
Salt, eventually
Olive oil

– Fry the diced pancetta crispy in a skillet without adding any fat.
– Chop the tomatoes. If you want, you can throw away the fat from the pancetta and add some olive oil instead, I prefer to keep it as it makes the sauce more savoury. Add the tomatoes and let it simmer until it has thickened. If the tomatoes don’t taste much you can add ½ tsp sugar.
– Add the oregano a couple of minutes before it’s ready.
– Mix the sauce with the cooked pasta and eat.
