

I’m just sitting here at the computer for a short while because I’m out in the garden working with all the things I didn’t do this autumn, I try and I try but I never manage to escape certain things but today I’m actually enjoying it; it is really very nice to stay outdoors and make a difference in our garden. And then there is the positive aspect of being allowed to go to a plant school and buy new plants when I have finished! This is the plant school area of Europe, you find them all over the place and it may be that you have bought plants coming from here if you live in Europe because they export to all over the continent and even beyond.
But I can’t just not participate in Weekend Herb Blogging for the sake of a single, dirty garden’s sake so here’s a pasta recipe, I haven’t posted one for a while so I thought it was about time. I used pasta but you can actually eat the vegetables either on their own or with something else like quinoa for example. Pine nuts are a great favourite of mine, I like them in salty food as well in sweeter dishes. This little nut contains a lot of protein, I actually think it has the highest percentage of protein of all nuts . You find them in the cones coming from many types of pine trees, some species give better pine nuts than others but there are a lot of types to try if you are interested... PASTA CON MELANZANE, ZUCCHINE E PINOLI or PASTA WITH EGG PLANT, ZUCCHINI E PINE NUTS
4 servings
400-500 g/14,1 -17,6 oz pasta
1 quite large eggplant
2 medium zucchini
3-4 tblsp pine nuts
1 clove of garlic
1 dried peperoncino
Salt
Olive oil
- Dice the eggplant and the zucchini.
- Heat the oil together with the garlic and the crumbled peperoncino and after a minute you add the diced eggplant, sprinkle them with the salt and fry them gently until it’s beginning to get golden. Stir often
- Now it’s time to add the diced zucchini and some more salt. Stir often. When these are getting golden, you add the pine nuts and stir some more.
- Mix it with the pasta or whatever you want to eat it with or eat it as a side dish.
