
A very simple dish this but it feels so right to eat now when the spring is actually showing itself here! The ‘vinaigrette’ can be used on many other vegetables and I know for a fact that it is very nice on a potato salad…
INSALATA DI FAGIOLI CON PORRO E PREZZEMOLO or SNAP BEANS WITH LEEK AND PARSLEY
Snap or string beans
4 tblsp very finely chopped leek, the white part
2 tblsp very finely chopped parsley
The juice of ½ lemon
Salt
1 ½ - 2 dl olive oil
- Steam the beans.
- Meanwhile you chop the leek and the parsley and mix it with the lemon juice and salt.
- Add the olive oil and stir well before you pour it over the hot beans. Eat them immediately or leave them to marinate for a while!
