GLUTEN-FREE WALNUT COOKIES

Don’t think that I have forgotten to work on my gluten-free experiments, here’s my latest try that turned out to be good, Gluten-free Walnut Cookies! I usually make my cookies without baking powder and such because the less chemical ingredients, the better they taste. At least I think so. I’m not sure that I can say so because everything is chemical, everything has a chemical formula, we can’t really talk about natural food because its essence is chemical but I think you know what I mean when I call baking powder a chemical substance. I used to find it slightly depressing that everything, even your feelings and actions, can be reduced to chemistry; I used to wonder how praiseworthy a good action is if it is the result of a chemical reaction but nowadays I think it is fascinating how the whole world is connected and we all have a place in the eternal chemical reaction of the universe. GLUTEN-FREE WALNUT COOKIES

150 gr salted butter
1 ½ -2 dl sugar
2 dl rice flour
1 ½ dl corn starch
Walnuts

- Stir butter and sugar smooth and add the rice flour and the corn starch. Continue to stir until completely mixed.
- Make balls of the size of a walnut and put them on a baking sheet.
- Press down half walnut kernels on top of each of them.
- Bake in a pre-heated oven (175° centigrades) for 10 minutes.
