CAVOLFIORE CON MANDORLE, SEMI DI SESAMO E CAPPERI or CAULIFLOWER WITH ALMONDS, SESAME SEEDS AND CAPERS

Cauliflower is a great vegetable because if you don’t like it, it is really easy to manipulate its taste so that it amalgamates with other flavours and if you like it, there are hundreds of ways to eat it. And then it is the esthetical aspect, I have already posted about Romanescu cabbage, an incredibly beautiful cousin, but I find cauliflower really attractive in its simplicity. It has a particular white shade that goes so well with the green shades of the leaves and the chubby forms are nice to hold on to as well! That I like capers is not a secret, I put them in all sorts of dishes but I usually use the salted ones because they taste so much more. The plant is absolutely stunning, it grows on walls and if you don’t pick the buds to make capers of them, the flower is very beautiful! (Photo coming up later this spring) Not to talk about the almond flower, it is gorgeous and as you see it is blossoming right now! It is one of the first trees to blossom and it is always such a welcome sight. I have to confess that I have no idea of what the plant that gives us sesame seeds looks like but I know that it is cultivated in some parts in Sicily. CAVOLFIORE CON MANDORLE, SEMI DI SESAMO E CAPPERI or CAULIFLOWER WITH ALMONDS, SESAME SEEDS AND CAPERS

1 head of cauliflower
½ dl almonds
2 tblsp sesame seeds
1-2 tblsp salted capers
Salt
Olive oil

– Break the cauliflower into smaller pieces that you stem until al dente. While they are cooked, you toast the almonds in a pan or skillet without fat and then you chip them coarsely.
– Leave the capers in a glass of water to ‘un-salt’ them before you start chopping.
– Toast the sesame seeds in the pan without fat but after some minutes, you add olive oil, the chopped capers and the cauliflower. Stir and continue to braise.
– After 2-3 minutes, you add the almonds and check if it is salt enough. Continue to braise until golden.
– Serve it hot or cold.
