It is really grey and boring here today, spring has arrived, trees and flowers are blooming but there is no sun, no real spring feeling.. I want it to be like when I was a child and adolescent and I just had to put on sneakers and go out and do whatever one did at various ages, skipping rope, biking around, walking on the church yard or hanging around with friend waiting for something to happen. And enjoying the sun, the warmth and the bitter sweet feeling of promise. But no, this year spring is very reluctant, in Italian you say: “Si fa desiderare” which in my bad translation means “it makes itself desired” (if someone can translate it better that this, don’t hesitate to correct me) So here is a recipe of a dish that somehow combines this years spring, the leek circle recalls spring while the potato and porcini filling recalls winter!

ANELLO DI PORRO CON PATATE E PORCINI AL TIMO or LEEK CIRCLES FILLED WITH POTATOES AND PORCINI BRAISED WITH THYME

Leek
Potatoes, 1 medium sized one per person
Mushrooms. I can’t really give you an exact amount, I used dried porcini which has a lot of flavour so I didn’t need that much so you just have to go on feeling. And trust your taste buds.
Chopped thyme, about 1 tblsp per person if you use fresh thyme
Chopped parsley, 1 tblsp per person
1 clove of garlic
Salt
Pepper
Olive oil

– Cut off the green part of the leek and then divide it lengthwise into two parts. Then boil the outer leaves in salted water for 8-10 minutes. Leave them to dry on a kitchen towel.
– Peel and dice the potatoes. Warm up the olive oil and the garlic in the frying pan, add the diced potatoes, thyme and some salt and let it fry gently until the potato is almost golden.
– Chop the mushrooms. If you used dried ones, don’t forget to let it soak for 30 minutes before using it. Add them to the potatoes and go on cooking until it’s all golden. Just before it’s ready, you add the parsley.
– Make circles of the leek leaves on the plates you are going to serve it on and then you spoon the potato and mushroom mix into it.
– Grind some fresh pepper over it and serve.
