Weekend Herb Blogging makes me realize how fast the days and the week pass by, I post one WHB post and it’s almost immediately time for the next one! But I just have to participate, it has become a comfortable habit and it is really nice to check out what all the other participants from all over the world writes about! I learn something new every week!

This week I present the juniper berry, a little dark blue berry that grows on juniper trees, that wonderful little tree that produces the most sweet smelling wood. In Sweden they make things with it, especially butter knives and I just love its herby smell. The berry is usually added to game dishes but I propose to use it in an artichoke and potato soup instead; I like artichokes a lot but sometimes I find that it’s difficult to find herbs or spices that really goes well with it. So I made this experiment and I like it so I decided to share the recipe with you, the perfume of the juniper goes, to my taste buds, surprisingly well with the artichoke!

CREMA DI CARCIOFI, PATATE E GINEPRO or ARTICHOKE AND POTATO SOUP WITH JUNIPER BERRIES

4 artichokes
2 big potatoes
1 onion
10 juniper berries
1 liter/ 4,2 cups water, you can use stock if you want but I wanted to have a ‘clean’ background for the juniper berries
Salt
Olive oil

– Peel and dice the potatoes, clean and slice the artichokes and the onion. Salt and fry them gently in some olive oil for 4-5 minutes.
– Add the water and the juniper berries and let it simmer for 15-20 minutes.
– Blend the soup until creamy. If there are fibers from the artichokes, you better let the soup pass through a sieve before serving it because they can be really irritating.
– Serve and eat!
